Fish
Fingers are a classic children's dish and we have chosen to adapt this
dish to incorporate local, fresh, sustainable & seasonal produce.
Local blue eye is in plentiful supply, its firm texture makes it ideal
for fish fingers and it's sweet mild flavour is appealing to younger
taste buds.
Rather than choosing the traditional accompaniment of
chips we have looked for a healthy option using fresh seasonal produce
that can be prepared in a way that is fun and colourful on the plate.
Tomatoes are great at this time of year and a homemade tomato ketchup
is a perfect dipping sauce for the fish fingers. Peas are also
beautiful in spring and mushy peas are a great way to prepare them for
maxium colour. And they are a lot easier for young children to keep on
the fork!
